Set the cake on a wire rack over a clean baking tray so excess icing can be collected and poured back over the cake.
Make lemon icing by adding juice to icing sugar a little at a time (and adjust thickness)
Add lemon juice gradually to icing sugar because small amounts of liquid thin it quickly; correct by adding more sugar or more juice.
Poke holes and spoon citrus juice onto a warm cake to infuse flavor and moisture
After a short rest, poke holes in the cake and spoon over citrus juice so it soaks through.
Test a cake for doneness with a cocktail/kebab stick and extend bake if needed
Insert a stick into the cake; if it comes out clean it’s done, if wet bake a little longer.
