Condensed Milk Chocolate Cake (Loaf) with Chocolate Ganache

Ingredients
  • 3 large Eggslarge
  • 1 tsp Vanilla extractadded to eggs before whisking
  • 1 oz Butter(optional)softened; optional, for extra-shiny ganache
  • 4 oz Buttermelted (microwaved about 30 seconds)
  • 1 tsp Instant coffeedissolved in hot water
  • 1 tbsp Hot waterto dissolve coffee
  • 1 can Sweetened condensed milkscrape all out of the tin
  • 8 oz All-purpose flourplain flour; sifted
  • 2 tsp Baking powderif using self-raising flour, use 1 tsp
  • 2 oz Cocoa powderpreferably rich dark/Dutch processed
  • 1/4 tsp Salt(optional)only if using unsalted butter
  • 180 g Dark chocolate(optional)plain/dark; chopped; for ganache
  • 180 ml Double cream(optional)for ganache; gently simmered

    Preheat oven to 160°C (320°F / gas mark 3). Grease and flour a 900 g / 2 lb loaf tin.

    Add eggs and vanilla extract to a bowl and whisk until light and fluffy (about 90 seconds).

    Whisk in the melted butter (about 30 seconds).

    Stir coffee into hot water to dissolve, then whisk it into the batter.

    Add the sweetened condensed milk and whisk thoroughly to combine.

    Sift in flour, baking powder, and cocoa powder (and salt if using unsalted butter). Tap through the sieve and push any lumps through.

    Gently fold the dry ingredients into the wet mixture with a spatula, taking care not to knock out the air.

    Scrape batter into the prepared loaf tin and tap the tin lightly to release large air bubbles.

    Bake for 45 minutes, then test with a skewer. If still wet in the middle, bake for about 5 minutes more until the skewer comes out clean.

    Cool the cake in the tin on a wire rack for about 10 minutes, then turn out and cool completely on the rack.

    For ganache: Chop the dark chocolate and place in a bowl. Heat double cream on very low heat until gently simmering, then pour over the chocolate. Leave undisturbed for about 3 minutes, then gently fold until smooth and glossy. Optionally mix in 1 oz softened butter for extra shine.

    Cover ganache and chill in the fridge for about 1 hour before using.
