How to julienne a pepper more easily by flattening it skin-side down
Flatten the pepper and slice it skin-side down to make even strips with less effort.
After removing seeds, open/flatten the pepper and place it skin-side down on the board. Slice up-and-down to create julienne (thin strips).
The short version
- Skin-side down makes slicing easier
- Julienne = thin strips
What you need
- chef's knife
- cutting board
How to do it
- 1
Flatten the pepper and place it skin-side down on the cutting board.
Skin-side down is described as easier to slice through.

How to chiffonade mint by rolling it into a cigar and slicing
Stack mint leaves, roll them tightly into a cigar, then slice to get fine ribbons.
Expect a small end piece to remain in the feed tube when shredding/slicing
When shredding or slicing in a food processor, the last small piece often doesn’t feed through cleanly and may stick near the top.
Use the thickness-adjustment lever correctly by installing the lever mechanism piece
To get different slice thicknesses, install the lever mechanism piece (not just the disc) so the thickness control actually changes the cut.

Move the chicken toward the edge of the board so you can keep the knife flat and parallel for an even horizontal cut.
