All techniquesMake alcohol-free vanilla extract with food-grade glycerin
Scrape seeds from 4 vanilla pods into a jar, cover with food-grade glycerin, then shake occasionally and infuse for 6–8 weeks.
Make homemade vanilla extract with vodka (alcohol-based)
Split 6–8 vanilla pods, add to a bottle, cover with neutral vodka, then store in a cool dark place and shake every few days for several weeks to 2 months.
Make vanilla sugar with used vanilla pods (don’t throw the husks away)
Put leftover vanilla pod husks into a jar of sugar, shake occasionally, and after a few weeks you’ll have vanilla-infused sugar.
Convert vanilla extract to vanilla pod seeds (1 tsp extract ≈ seeds of 1 pod)
If a recipe calls for 1 teaspoon of vanilla extract, you can substitute the seeds from 1 vanilla pod.
How to scrape vanilla seeds from a vanilla pod
Split the pod lengthwise with a small sharp knife, then scrape along the inside to collect the seeds.
How to choose fresh vanilla pods (look for bendy, malleable pods)
Pick vanilla pods that are flexible and not crispy to get better flavour.
Use vanilla powder to add vanilla flavour without changing a mixture’s viscosity
Vanilla powder (ground pods) adds flavour and specks while keeping the same liquid consistency.
Use vanilla bean paste when you want vanilla specks without adding much liquid
Vanilla bean paste adds visible vanilla seeds and flavour with a thick consistency, useful when you don’t want extra liquid in a recipe.
