Homemade Vanilla Extract (Alcohol-Based) and Alcohol-Free Vanilla Extract (Glycerin-Based)

Ingredients
  • •VodkaClear, colorless, flavorless alcohol; amount to fill a ~500 ml bottle (example bottle mentioned: 12 oz/350 ml with room for vanilla)
  • •6 to 8 Vanilla podsSplit down the middle
  • •200 ml Food-grade glycerinEdible/food grade; check vegetable vs animal-derived if vegetarian
  • •4 Vanilla podsSeeds scraped out (helps infusion in thicker glycerin)
Instructions

    Alcohol-based vanilla extract: Choose a clear, colorless, flavorless alcohol (vodka). Use a bottle that holds about 500 ml (example: 12 oz/350 ml bottle with room for vanilla).

    Split 6 to 8 vanilla pods down the middle and put them into the bottle.

    Pour the vodka over the vanilla pods to cover, then close the lid and shake well.

    Store in a cool, dark place away from sunlight. Shake every few days. Let infuse for a few weeks up to 2 months until strong enough to use.

    Glycerin-based (alcohol-free) vanilla extract: Use edible/food-grade glycerin (check vegetable vs animal-derived if needed).

    For a 200 ml bottle of glycerin, scrape the seeds from 4 vanilla pods (glycerin is thicker, so scraping helps). Put seeds/pods into a jar.

    Pour glycerin over the vanilla to cover. Close the lid and shake very well.

    Let infuse 6 to 8 weeks, shaking occasionally.
