Raise butter’s effective smoke point by adding olive oil
Combine butter with olive oil so you can cook hotter without burning the butter as quickly.
For the steak, the video adds butter and then olive oil specifically to bring the smoke point up. This lets you use the flavor of butter while tolerating higher searing heat.
