How to broil vs roast in an oven (top heat vs surrounding heat)
Broil uses heat from the top to crisp quickly; roast uses heat from bottom/sides to cook through more slowly.
Use broil when you want fast cooking and a crispy top because the heat comes from above the food. Use roast when you want more even cooking (inside and out) because heat comes from the bottom and sides and takes longer.
