Keep raw poultry prep contained, then fully clear and clean the area before continuing
Prep raw chicken on its own board/plate, then remove it and clean the work area before prepping anything else.
When breaking down or handling raw chicken, keep it on a dedicated cutting board/plate during that task. Once done, move the chicken and contaminated tools completely out of the way, discard scraps, and clean the prep surface so you can safely continue cooking.
The short version
- Don’t prep vegetables on a board that just had raw chicken
- Reset your station after handling poultry
What you need
- cutting boardUse a separate one for raw poultry during prep
- knifeKeep poultry knife separate during the task if possible
- plate or trayoptionalFor holding prepped chicken
How to do it
- 1
Prep the raw chicken on its own plate and/or a cutting board dedicated to that task.
Avoid letting raw juices contact other ingredients or tools.
Watch this step - 2
When finished, move the chicken and the contaminated board/knife completely out of your active prep area.
The video suggests putting it fully out of the way for the rest of cooking if needed.
Watch this step - 3
Throw scraps away and clean the prep surface area before continuing with other ingredients.
Treat this as a “reset” before you go back to normal prep.

What goes wrong
Cutting vegetables (e.g., onion) on the same board right after raw chicken
Use a separate board/plate for poultry and clean/reset before switching tasks
Why it works
Raw poultry juices can carry pathogens; isolating the task and resetting the workspace reduces the chance of contaminating ready-to-eat foods and other ingredients.
