How to remove chicken legs by popping the ball joint and cutting along the spine (keep the oyster)

Expose the leg ball joint, then ride your knife tight to the backbone to remove the leg cleanly while keeping the oyster attached to the leg.

Pinch/open the skin between leg and breast to find the seam, pull the leg back to pop the joint so you can see where it meets the spine, then cut with the blade tight against the backbone all the way down. Cutting against the spine helps you avoid gouging meat and preserves the oyster.

How to do it

    Place the chicken cavity-side toward you; start with the legs.

    Pinch/open the skin between the leg and breast to reveal the seam; make a small incision to expose where the leg joins the breast.

    Look for the spot with little/no meat so you don’t cut into muscle unnecessarily.

    Cut with your knife tight against the spine/backbone, riding the bone all the way down to remove the leg (keeping the oyster).
