Deglaze the pan with acid (like balsamic) to lift browned bits and make a quick glaze

Add a splash of vinegar to dissolve browned bits on the pan and let it reduce slightly to coat the food.

Once you have browned bits (fond), add balsamic vinegar to loosen them. Let it cook briefly so it reduces/thickens, then toss to coat.
