- •8 heaped tablespoons Golden unrefined sugar
- •8 heaped tablespoons Self-raising flour
- •125 grams Butterdiced
- •Orange zestfrom one orange
- •Lemon zestfrom one lemon

Crack two large free-range eggs into a bowl.

Add eight heaped tablespoons of golden unrefined sugar.

Add eight heaped tablespoons of self-raising flour.

Add 125 grams of diced butter.

Zest one orange and one lemon, add to the mixture.

Mix all ingredients thoroughly to form a batter.

Optionally, add a tiny bit of orange juice to loosen the batter.

Spoon the batter into cupcake molds, filling just below the top.
