Ingredients
  • 2 Eggslarge, free-range
  • 8 heaped tablespoons Golden unrefined sugar
  • 8 heaped tablespoons Self-raising flour
  • 125 grams Butterdiced
  • Orange zestfrom one orange
  • Lemon zestfrom one lemon
  • Orange juice(optional)a tiny bit, optional

    Crack two large free-range eggs into a bowl.

    Add eight heaped tablespoons of golden unrefined sugar.

    Add eight heaped tablespoons of self-raising flour.

    Add 125 grams of diced butter.

    Zest one orange and one lemon, add to the mixture.

    Mix all ingredients thoroughly to form a batter.

    Optionally, add a tiny bit of orange juice to loosen the batter.

    Spoon the batter into cupcake molds, filling just below the top.

    Bake for 15 minutes. Check doneness with a knife; if it comes out clean, they are done.
