Wilted Romaine with Oyster Sauce and Garlic

Heat 2 tablespoons of oil in a wok over relatively high heat.

Add the garlic to the oil and sauté until it sweats and the rawness is cooked out, without browning.

Add 2 tablespoons of oyster sauce, 1 tablespoon of soy sauce, and 3 tablespoons of water to the garlic. Simmer the sauce.

Blanch the romaine lettuce in salted boiling water for about 20 seconds until wilted but still crisp.
