Ingredients
  • 600 grams Whole wheat flour
  • 1 1/2 teaspoons Kosher saltUse 1 teaspoon if using table salt
  • 1 teaspoon Sugar
  • 1 teaspoon YeastActivated in lukewarm water
  • 420 ml WaterLukewarm, around 40°C (105°F)
  • 2 tablespoons Oil

    Add 1 teaspoon of sugar to lukewarm water (around 40°C/105°F) and mix in the yeast. Set aside to activate.

    Add whole wheat flour to a warm bowl and mix in kosher salt using a whisk.

    Pour the activated yeast mixture into the flour and add oil. Mix until it comes together.

    Cover the dough and let it sit in a warm, draft-free spot for 45 minutes.

    Wet hands and worktop, knock back the dough, and let it rise for another 30 minutes.

    Grease a 2-pound loaf tin. Shape the dough into a rectangle, roll it, and place it seam side down in the tin.

    Allow the dough to rise until it has risen just above the rim of the loaf tin, about 30-60 minutes.

    Preheat oven to 190°C (375°F). Bake the bread for 30 minutes, turning halfway through.

    Remove bread from tin and bake for an additional 5 minutes to crisp the crust.
