  • 1 Whole sea basson the bone
  • 1 Nor vegetable reduced salt stock cubecrumbled
  • Olive oilfor paste and roasting
  • Rosemaryfinely shredded
  • Fresh thyme
  • Cracked coriandertoasted
  • 1.5 Lemonsjuiced
  • Basil
  • Tomatoesblanched, skinned, cut into quarters
  • Fresh coriander

    Preheat the oven.

    Crumb the stock cube and mix with olive oil to make a paste.

    Add finely shredded rosemary and fresh thyme to the paste.

    Season the fish inside the cavity with the paste.

    Place the fish on a roasting tray with olive oil and roast for 12-15 minutes.
