Ingredients
  • 2 whole Orangessimmered and pureed
  • 6 Eggs
  • 1 cup Caster sugarfor cake
  • 2 cups Ground almonds
  • 1 tsp Baking powder
  • 1 tsp Vanilla extract
  • 1 pinch Salted flakes(optional)pinch
  • 1/2 cup Caster sugarfor syrup
  • 1/4 cup Flaked almonds(optional)for topping

    Simmer whole oranges for about 45 minutes, remove any pips, and blend into a puree.

    Beat six eggs with caster sugar until light and fluffy.

    Mix in ground almonds, orange puree, baking powder, vanilla extract, and a pinch of salted flakes.

    Pour the mixture into a cake tin lined with baking paper.

    Bake for 45-50 minutes.

    Juice remaining oranges and simmer with caster sugar to make syrup.
