Whole Orange & Almond Cake
A moist and flavorful cake made with whole oranges and ground almonds.

- •1 cup Caster sugarfor cake
- •2 cups Ground almonds
- •1 tsp Baking powder
- •1 tsp Vanilla extract
- •1 pinch Salted flakes(optional)pinch
- •1/2 cup Caster sugarfor syrup
- •1/4 cup Flaked almonds(optional)for topping

Simmer whole oranges for about 45 minutes, remove any pips, and blend into a puree.

Beat six eggs with caster sugar until light and fluffy.

Mix in ground almonds, orange puree, baking powder, vanilla extract, and a pinch of salted flakes.

Pour the mixture into a cake tin lined with baking paper.

Bake for 45-50 minutes.

Juice remaining oranges and simmer with caster sugar to make syrup.
