Mix olive oil, water, yeast, semolina flour, bread flour, sugar, and salt. Mix for 5 minutes, then on second speed for another 5 minutes. Rest for 5 minutes, then mix for 30 seconds. Proof for about an hour, then portion and roll.

Roll dough in seeds, let bloom, slice, and bake at 375°F for 15 minutes.

Make cheese sauce with milk, aged cheddar, Monterey, pecorino, salt, onion powder, garlic powder, mustard, black pepper, and sodium citrate. Blend with immersion blender.

Prepare Wario sauce with caramelized onions, roasted garlic, pepper, salt, lemon zest, lemon juice, and mayo. Blend to a paste.

Cook ribeye on flat top with salt and pepper. Toast bottom of bun.
