- •1 part Mustardfor sauce

- •Smoked paprikafor sauce

Add 250 grams of cooked and drained black beans to a food processor along with 20 grams of bread crumbs. Lightly pulse until mealy.

Pour the mixture into a bowl and add 20 cranks of black pepper, 3 grams of salt, and 2 grams of powdered MSG. Mix together.

Bind the mixture with half a beaten egg and a spoonful of cornstarch. Mix until it forms a ball.

Form the mixture into four 65 gram balls.

Heat a cast iron pan over high heat with peanut oil. Smash the balls into patties using parchment paper and a spatula. Cook for 2-3 minutes per side.

Add shredded cheese between two patties and flip to melt the cheese.

Assemble the burger with sauce, pickled onion, tomato slices, shredded lettuce, and the black bean patties on a toasted brioche bun.
