Ingredients
  • 1 Leeksfinely sliced
  • 1 Red peppersdiced
  • 1 Carrotgrated
  • Cheddar cheesegrated
  • Red Leicester cheese(optional)grated
  • Parsley(optional)chopped
  • Mint(optional)chopped
  • 4 Tortillas

    Finely slice the leeks and dice the red peppers.

    Grate the carrot and mix with the leeks and peppers.

    Grate the cheddar and Red Leicester cheese, and mix with the vegetables.

    Add chopped parsley and mint to the mixture.

    Place the mixture onto tortillas and fold them.

    Cook the quesadillas in a dry nonstick pan on medium heat for about 3 minutes on each side until golden brown.
