  • Veal slicesThin slices, tenderized
  • FlourFor coating veal
  • 2 knobs Butter
  • Salt
  • Button mushroomsFresh, sliced and cubed
  • Porcini mushroomsFrozen
  • 2 ladles Beef brothHot
  • Parsley
  • RouxButter and flour in equal parts with broth

    Prepare veal slices by removing excess fat and tenderizing them between parchment paper.
