Vanilla Extract
Homemade vanilla extract made by infusing chopped vanilla beans in vodka and aging for at least a month.

- •1 oz Vanilla beanscut into 1–2 cm (about 1/4–1/2 inch) pieces

Cut the vanilla beans into small pieces (about 1–2 cm / 1/4–1/2 inch).

Put the cut vanilla beans into a jar or bottle (no need to scrape the seeds).

Pour in just over 1 cup of vodka.

Put on the lid and shake well.

Store in a cool, dry place and shake once a day for at least 1 month (preferably 2–3 months for stronger flavor).

After aging, strain the extract through cheesecloth or a coffee filter.

Pour the strained vanilla extract into a clean container/bottle (use a funnel if needed).
