    Prepare toppings: cut green leaf lettuce into bun-size pieces; slice the tomato into 8 thin slices; thinly slice half a red onion; set aside cheddar slices.

    Butter the cut sides of the potato buns with softened or melted butter; set aside for toasting later.

    Make optional sauces: (a) mayonnaise + 1 teaspoon yellow mustard, (b) mayonnaise + Dijon mustard, (c) mayonnaise + ketchup (fry sauce), (d) mayonnaise + barbecue sauce.

    Preheat grill to medium heat.

    Form patties: use 80/20 ground chuck; divide into 4 equal portions and shape into patties about 1 inch wider than the buns, without overworking. Make a small well in the center of each patty.

    When ready to grill, season patties generously on both sides with salt and pepper.

    Grill patties on the hot grill for about 3 to 5 minutes per side, flipping once a good sear forms. Cover and cook until internal temperature reaches 160°F (71°C). Add cheddar to melt near the end.

    Toast the buttered buns on the grill until golden to prevent sogginess.

    Assemble burgers: spread desired sauce on toasted bun, add pickles (optional), lettuce, 2 tomato slices, red onion, and the cheeseburger patty; top with bun and serve hot.
