  • 1 slice Thick cut baconcut in half
  • 6 ounces 80/20 ground beefdivided into three 2-ounce piles
  • 1 pinch Saltfor seasoning beef
  • 2 slices American cheese
  • 1 head Romaine lettucevery finely sliced
  • 1 jar Pickled onions
  • 1 count Brioche bun
  • 2 parts Mayonnaisefor burger sauce
  • 1 part Horseradishfor burger sauce
  • 1 part Hot saucefor burger sauce
  • 1 part Mustardfor burger sauce
  • 1 part Honeyfor burger sauce
  • 1 sprinkle Garlic powderfor burger sauce
  • 1 sprinkle Smoked paprikafor burger sauce
  • 7 cranks Black pepperfor burger sauce

    Cut the bacon slice in half and place on a cold griddle. Turn heat to medium-low and cook slowly until crisp.

    Mix burger sauce ingredients: 2 parts mayo, 1 part horseradish, 1 part hot sauce, 1 part mustard, 1 part honey, a sprinkle of garlic powder, smoked paprika, and 7 cranks of black pepper. Stir and adjust seasoning.

    Finely slice romaine lettuce. Gather pickled onions, American cheese slices, and brioche bun.

    Weigh out 6 ounces of ground beef and divide into three 2-ounce piles. Season with a pinch of salt.

    Mop up bacon fat with buns and toast them on the griddle.

    Place beef piles on hot griddle, smash down, and cook for 30-60 seconds to develop a crust.
