Traditional Okonomiyaki

- •1/2 teaspoon Kosher salt

- •1/2 cup Dashi
- •CabbageFinely chopped

- •Pork belly(optional)Thinly sliced

Whisk together flour, baking powder, and salt.

Add whisked eggs and dashi to the dry ingredients and mix to form a batter.

Finely chop cabbage and add to the batter.

Add green onion whites, pickled ginger, tempura scraps, and shrimp to the batter and mix.

Prepare okonomiyaki sauce by mixing ketchup, Worcestershire sauce, soy sauce, honey, and molasses.

Heat a nonstick skillet over medium heat and add batter to form a pancake.

Optionally add pork belly slices on top and cook until the bottom is crispy.

Flip the pancake and cook the other side until crispy.

Brush both sides with okonomiyaki sauce and cook until done.

Top with additional sauce, mayonnaise, bonito flakes, green onions, and nori. Cut and serve.
