Ingredients
  • PancettaSpecific type from Soria or substitute with pork belly or unsmoked bacon
  • A touch Olive oilJust enough to coat the pan

    Cut pancetta into one-inch thick strips.

    Heat a sauté pan and add a touch of olive oil to coat the pan.

    Place pancetta strips skin side down in the pan and apply pressure to ensure full contact.

    Cook for about 10 minutes until the skin is crispy and bubbling.

    Turn the pancetta strips and cook for another 10 minutes until fully cooked through.

    Remove from heat and place on a paper towel to drain excess fat.
