Ingredients
  • Chorizosliced
  • Olive oilfor cooking chorizo
  • Tomatoescut into various shapes
  • Shallot(optional)or scallion, finely chopped
  • Black pepperto taste
  • Sea saltto taste
  • Olive oilfor dressing
  • Sherry vinegarfor dressing
  • Parsley(optional)chopped
  • Basil(optional)chopped
  • Garlicfinely sliced

    Slice the chorizo and cook it in a little olive oil until crispy.

    Cut the tomatoes into various shapes and place in a bowl.

    Add finely chopped shallot or scallion to the tomatoes.

    Season the tomatoes with black pepper and sea salt.

    Drizzle olive oil and sherry vinegar over the tomatoes.

    Chop parsley and basil, then sprinkle over the salad.

    Finely slice garlic and add to the pan with chorizo, watching closely.
