  • 1 pound Porkshoulder part, lean cut
  • 1/2 teaspoon Ginger
  • 1/2 teaspoon Salt
  • 1 cup Potato starchfor batter
  • 3 cups Waterfor batter
  • 4 cups Corn oilfor frying
  • 1 Egg white
  • 3 Wood ear mushroomssoaked
  • Shiitake mushrooms(optional)optional for vegetarian version
  • Onionsmall amount
  • Applesmall amount
  • Cucumberthinly sliced
  • Pineapplecanned or fresh
  • Sugarto taste
  • 2 tablespoons White vinegaror apple vinegar
  • 1/2 teaspoon Soy sauce
  • Sesame oilto taste

    Slice pork into thin slices and season with ginger and salt. Refrigerate.

    Prepare batter with potato starch and water. Let it settle for 1.5 hours.

    Soak wood ear mushrooms until plump.

    Heat corn oil for frying.

    Mix pork with starch and coat with batter. Fry until light golden brown.

    Prepare sauce with cooking oil, mushrooms, onion, apple, sugar, vinegar, soy sauce, and salt. Thicken with starch water.
