Sweet and Sour Chicken

- •2 tsp Sugar
- •0.5 tsp Kosher salt
- •1 tsp Shaoxing wine(optional)can use dry sherry or white wine
- •1 tsp Light soy sauce

- •1 Green bell pepperdiced
- •1 Red bell pepperdiced
- •4 Garlic clovescrushed
- •1 piece Gingerpeeled and crushed
- •10 oz Pineapple juicefrom canned pineapple
- •3 tbsp Ketchup
- •2 tbsp Vinegar
- •1 tbsp Sugarfor sauce
- •1 tsp Soy saucefor sauce
- •0.5 cup Cashews(optional)

Mix chicken with cornstarch, baking soda, sugar, salt, Shaoxing wine, soy sauce, and egg white. Massage vigorously and set aside for 15 minutes.

Dice onion, green bell pepper, and red bell pepper.

Crush garlic and ginger using a mortar and pestle.

Mix pineapple juice, ketchup, vinegar, sugar, soy sauce, and cornstarch for the sauce.

Simmer chicken in boiling water for 30 seconds to 1 minute, then spread on a tray to dry.
