  • 2 pounds Yellow potatoesHigh starch content
  • SaltFor boiling water and seasoning
  • 4 tbsp Olive oilFor coating potatoes and baking sheet
  • 3 Garlic clovesIn skins
  • RosemaryMinced and sprigs

    Peel and cut potatoes into 1 1/2 to 2 inch cubes or wedges.

    Parboil potatoes in salted boiling water for 5 minutes.

    Drain and shake potatoes in a colander to roughen surfaces.

    Let potatoes cool and dry.

    Preheat oven to 425°F (220°C).

    Coat potatoes with olive oil and lightly oil a baking sheet.
