  • .5 cups Plain flour
  • .25 teaspoons SaltPinch
  • .25 teaspoons Black pepperPinch
  • .5 tablespoons Olive oilFor dough
  • 100 g PancettaChunky
  • 200 g Cherry tomatoesWhole
  • 2 GarlicCrushed
  • 1 ChiliChopped
  • 500 g Mussels
  • 100 ml Dry sherry
  • 1 tablespoon OreganoFinely chopped stalks

    Infuse saffron in hot water.

    Combine flour, salt, pepper, olive oil, and saffron water to make dough.

    Knead dough until smooth and let rest for 10-15 minutes.

    Divide dough into three, roll thinly, and cook in a hot dry pan until blistered.
