  • 3 cups All-purpose flour
  • 1 teaspoon Fine sea salt
  • 3/4 cup Boiling waterHot water
  • 1/4 head Napa cabbageSlice and rough chop
  • 1 bunch Green onionsThinly sliced
  • 1 pound Ground porkAt least 20% fat
  • 3 cloves GarlicFreshly grated
  • 2 inch GingerPeeled and grated
  • 1 tablespoon Soy sauce
  • 1.5 teaspoons Kosher salt
  • 1 teaspoon Granulated sugar(optional)For dipping sauce
  • 1 tablespoon Hot water(optional)For dipping sauce
  • 1 tablespoon Rice vinegar(optional)For dipping sauce
  • 1 teaspoon Sesame oil(optional)For dipping sauce
  • 1 clove Garlic(optional)Minced, for dipping sauce
  • 0.5 Green onion(optional)Thinly sliced, for dipping sauce

    Measure 3 cups of all-purpose flour and 1 teaspoon of fine sea salt into a large bowl. Whisk until evenly incorporated.

    Add 3/4 cup of boiling water to the flour mixture. Mix with a wooden spoon until a rough dough forms.

    Knead the dough until it comes together, adding more water if needed. Continue kneading for 5 minutes until smooth.

    Shape the dough into a disc, wrap in plastic, and let it rest at room temperature for 1 hour.

    Slice and rough chop 1/4 head of napa cabbage. Season with salt and squeeze to soften. Drain half the liquid.

    Add sliced green onions, 1 pound of ground pork, 3 grated garlic cloves, grated ginger, 1 tablespoon soy sauce, and 1.5 teaspoons kosher salt to the cabbage. Mix well.

    Cut the rested dough into four pieces. Roll or sheet each piece into a thin sheet using a pasta roller.

    Cut dough sheets into circles using a 3.5-inch cutter. Fill each circle with pork filling and pleat to seal.

    Line a bamboo steamer with cabbage leaves. Place dumplings in the steamer without touching.

    Steam dumplings over boiling water for 7 to 10 minutes until fully cooked.

    For dipping sauce, dissolve 1 teaspoon sugar in 1 tablespoon hot water. Add 3 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 teaspoon sesame oil, 1 minced garlic clove, and sliced green onion. Stir well.
