Steak Pies with Peppercorn Sauce

- •1/2 cup Vegetable oil
- •1 Onionchopped
- •500 g Stewing beefdiced
- •2 cubes Beef stockor natural beef stock
- •2 Bay leaves
- •Salt(optional)to taste
- •2 tbsp Corn flourmixed with cold water
- •1 cup Water
- •100 g Lard(optional)or solid vegetable fat
- •50 g Butter
- •500 g All-purpose flour
- •2 cloves Garlicminced
- •2 Shallotschopped
- •1 tbsp Black peppercornscrushed
- •1/2 cup Red wineor Marsala
- •1 tsp Mustard
- •1/2 cup Cream
- •1 Eggfor egg wash
- •1 tbsp Milkfor egg wash

Heat half the vegetable oil in a saucepan and cook the onion until soft.

In a frying pan, heat the remaining oil and brown the stewing beef.

Combine beef with onions, add beef stock, bay leaves, and salt. Simmer for 1 hour.

Thicken with corn flour mixed with cold water. Cool completely.

For pastry, heat water, lard, and butter until melted. Mix with flour and salt to form dough. Chill for 1 hour.

For sauce, melt butter, add garlic, shallots, and peppercorns. Cook for 10 minutes.

Add red wine, reduce by half, then add mustard, beef stock, and cream. Cook for 1 minute.

Roll out pastry, line pie tins, fill with beef mixture, add sauce, and cover with pastry lid.

Brush with egg wash, cut vent, and bake at 160°C for 45 minutes.
