Steak & Guinness Pie
A hearty pie made with beef, Guinness, and vegetables, topped with puff pastry.

- •2 sticks Celery

- •Water or beef stock(optional)just a little bit
- •Puff pastrypre-bought
- •200 grams Cheddar cheese100g stirred into stew, 100g on top

Preheat oven to 180°C (350°F).

Peel and slice 3 onions. Cook with olive oil, salt, and pepper.

Add a sprig of rosemary and 3 cloves of garlic to the onions.

Add a knob of butter, 2 sticks of celery, and 2 peeled and sliced carrots.

Slice mushrooms and add to the mixture.

Add inch diced brisket of beef, a big pinch of salt and pepper.

Pour in one can of Guinness and stir in a heaped tablespoon of flour.

Add a little water or beef stock, cover, and cook in the oven for 2 hours.

Roll out puff pastry to 3mm thick. Cut a third for the lid.

Stir 100g of cheddar cheese into the stew and fill the pie dish.

Top with another 100g of cheddar cheese.

Roll out the pastry lid, score lightly, and apply egg wash.

Cover the pie with the pastry lid, crimp edges, and bake for 40 minutes.
