Ingredients
  • 200 g Smokey streaky baconcut into strips
  • Beef brisketdiced
  • 2 Brown onionspeeled and diced
  • 2 Carrotspeeled and diced
  • 1 stick Celerydiced
  • 1 tbsp Vegetable oil
  • Saltto taste
  • 3 tbsp Plain flouror all-purpose
  • 1 tbsp Tomato puree
  • 4-5 sprigs Thymeleaves only
  • 400 ml Brown ale
  • 600 ml Beef stock
  • 2 Bay leaves
  • Black pepperto taste
  • 700 g Plain flourfor pastry
  • 150 g Unsalted butter
  • 15 g Lard
  • Egg yolkfor brushing

    Cut 200g of smokey streaky bacon into strips.

    Dice beef brisket if not already diced.

    Peel and dice 2 brown onions, 2 carrots, and 1 stick of celery.

    Heat a large casserole dish over high heat and add 1 tbsp of vegetable oil.

    Cook bacon until crispy, then remove from pan.

    Brown beef in batches, then remove from pan.

    Add diced onions, carrots, and celery to the pan with a pinch of salt. Cook for 5 minutes until soft.

    Return beef and bacon to the pan. Stir in 3 tbsp of flour and 1 tbsp of tomato puree.

    Add leaves from 4-5 sprigs of thyme. Cook for 5 minutes.

    Add 400ml of brown ale and 600ml of beef stock. Add 2 bay leaves. Bring to a simmer.

    Season with salt and pepper. Cover and bake at 160°C fan for 2 hours.

    For pastry, mix 700g flour, a pinch of salt, 150g butter, and 15g lard until breadcrumb-like.

    Add cold water gradually until dough forms. Wrap and chill in fridge.

    Remove meat from oven and separate from liquid. Cool.

    Roll out 2/3 of pastry to line pie dish. Fill with meat and cover with gravy.

    Roll out remaining pastry for pie lid. Brush edges with egg yolk, cover, and seal.

    Brush top with egg yolk. Bake at 200°C fan for 40-45 minutes until golden.
