- •113 g Milk
- •0.5 Lemonjuice from half a lemon
- •10 g Louisiana style hot sauceyour favorite
- •2 inches Peanut oilenough to fry, about two inches high

- •25 g Corn starch
- •20 cranks Black pepper
- •.5 tsp Cayenne powder
- •.5 tsp Smoked paprika
- •.5 tsp Garlic powder

Chop the boneless skinless chicken thighs into bite-size pieces.

In a large mixing bowl, add the chopped chicken, salt, milk, lemon juice, and hot sauce. Mix together.

Heat peanut oil in a wok over medium heat to about two inches high.

In a separate bowl, mix flour, corn starch, black pepper, cayenne powder, smoked paprika, and garlic powder.

Pour a little of the milk mixture into the flour mixture to create clumps.

Coat chicken pieces in the flour mixture, pressing to adhere.

Fry chicken in oil at 325-350°F for 5-7 minutes until golden brown.

Remove chicken and drain on paper towels.

In a heat-safe bowl, mix leftover fry oil, butter, salt, hot sauce, and cayenne pepper. Drizzle over chicken.
