  • 250 grams Flour
  • 5 grams Salt
  • 3 grams Yeast
  • 1 gram Baking powder
  • 1 gram Sugar
  • 125 grams Water
  • Lamb shoulder chopsRemove bones and slice thinly
  • 20 grams Cornstarch
  • 1 ScallionSliced
  • 0.5 Red onionSliced
  • 1 Thai chili pepperSliced
  • 2 Garlic clovesGrated
  • 1 knob GingerGrated
  • 2 tablespoons Ground cuminFreshly ground
  • 1 tablespoon Thai dry red chili powderOr cayenne pepper
  • 1 pinch MSG(optional)
  • 30 grams Neutral oil

    Mix flour, salt, yeast, baking powder, sugar, and water to form a dough. Knead for 5 minutes.

    Cover dough and let rest for 30 minutes.

    Knead dough again for 2 minutes, shape into a circle, and let rest for 10 minutes.

    Divide dough into 4 pieces, shape into balls, and roll into 4-5 inch circles.

    Cook dough in a skillet over medium heat for 1 minute per side until browned.

    Slice lamb, add salt and cornstarch, and set aside.

    Prepare aromatics: slice scallion, red onion, and chili; grate garlic and ginger.

    Grind cumin seeds and mix with chili powder.

    Heat oil in a wok, stir-fry scallion, ginger, and garlic for 20 seconds.
