  • 1 tablespoon Olive oil
  • 1 Sirloin steakRoom temperature
  • SaltTo taste
  • Black pepperTo taste
  • 1 Red chiliSeeds removed and chopped
  • 1 clove GarlicChopped
  • 2 teaspoons Palm sugar
  • Fish sauceTo taste
  • Fresh lime juiceTo taste
  • 1 CarrotPeeled into ribbons
  • 3 RadishesSliced
  • 1 Banana shallotChopped
  • 4 Vine tomatoesHalved
  • 1 CucumberPeeled and sliced
  • 2 Spring onionsChopped
  • 1 Baby gem lettuceShredded
  • 1 bunch Fresh mintChopped
  • 2 tablespoons Toasted peanutsCrushed

    Season the sirloin steak with salt and pepper. Heat olive oil in a pan and cook the steak for 2.5 minutes on each side. Let it rest.

    Prepare the chili dressing by chopping the chili and garlic. Mix with palm sugar, fish sauce, and lime juice.

    Use a vegetable peeler to create ribbons of carrot. Slice radishes, chop the shallot, and halve the tomatoes.

    Peel and slice cucumber, chop spring onions, and shred baby gem lettuce. Chop fresh mint.

    Combine all vegetables in a bowl. Add dressing and mix well.

    Slice the rested steak and arrange over the salad. Sprinkle with toasted peanuts.
