- •50 g Sugar
- •7 g Yeastinstant or active dried
- •1 tsp Mixed spice powder
- •1 tsp Salt
- •200 g Dried mixed fruit and candied peel
- •500 g Flour

Beat the egg and add it to the milk.

Add sugar to the milk and mix until dissolved.

Microwave the mixture for about 30 seconds until it reaches around 40°C (104°F).

Add yeast to the lukewarm milk and set aside for 5-10 minutes until foamy.

Mix dry ingredients: flour, mixed spice powder, salt, dried mixed fruit, and candied peel.

Combine yeast mixture, oil, and flour mixture in a mixer with a dough hook.

Knead the dough until it releases from the sides of the bowl, about 12 minutes.

Form dough into a ball and place in a lightly oiled bowl. Cover and let rise for 60 minutes.

Turn dough onto a floured surface, knock back, and shape into a loaf.

Place dough in a greased loaf tin and let rise for another 60 minutes.

Preheat oven to 180°C (355°F).
