Ingredients
  • Chicken wingsprepped and dried
  • Chestnut mushroomscut into quarters
  • Oyster mushroomspulled apart if large
  • 10 Garlic clovescrushed with skin on
  • 1 Bay leaf
  • Fresh thyme(optional)or dried thyme
  • Black pepperto taste
  • White wine
  • Olive oil
  • Saltto taste
  • Butter(optional)optional for sauce

    Prep the chicken wings by ensuring they are dry. Season with salt on both sides.

    Prepare the mushrooms by cutting chestnut mushrooms into quarters and pulling apart larger oyster mushrooms.

    Crush 10 cloves of garlic, leaving the skin on.

    Heat olive oil in a sauté pan over medium heat. Add chicken wings skin side down and cook for 30 minutes on low heat, turning once golden brown.

    Add garlic to the pan and sauté for 5 minutes on medium heat.

    Add thyme, bay leaf, and white wine to the pan. Let the wine reduce to create the sauce.

    Add mushrooms to the pan and cook for a couple more minutes. Add black pepper and a little water if needed.

    Optional: Add butter to the sauce for a creamier texture. Bring to a boil and achieve a thick consistency.
