Ingredients
  • 1 Onionsjulienned
  • 3 Potatoespeeled and sliced thinly
  • 500 ml Olive oilfor frying
  • 5 Eggs
  • Saltto taste

    Julienne the onion and slice the potatoes thinly (about 3-4 mm).

    Heat 500 ml of olive oil in a large pan.

    Add the onions to the pan and caramelize them.

    Add the sliced potatoes to the pan and cook on medium to low heat for about 15 minutes, stirring occasionally.

    Beat 5 eggs in a bowl and add the cooked onions and potatoes, draining excess oil.

    Add salt to taste and let the mixture sit for 15 minutes.

    Heat a nonstick pan with a little oil, add the egg mixture, and cook on high heat for 1 minute, then medium heat for 2-3 minutes.

    Flip the tortilla using a plate and cook the other side for another 3 minutes.
