Spanish Egg Fried Rice
A fusion dish combining Spanish ingredients with Asian-style fried rice.

- •1 Red bell peppersweeter and adds color
- •200 g Fresh chorizoSpanish chorizo, raw
- •2 Garlic clovesslice or dice
- •1 pinch Saffronadds unique flavor
- •2 cups Jasmine ricecooked and chilled
- •2 tbsp Lardfor frying
- •2 tbsp Carne de Norasubstitute for sambal
- •2 Eggsfor Spanish fried egg
- •1 cup Olive oilfor frying eggs
- •1 handful Parsley(optional)for garnish

Prepare the shallots by slicing them. Dice the red bell pepper.

Cook the fresh chorizo in a pan until browned.

Add sliced garlic to the pan, being careful not to burn it.

Add saffron to the pan for flavor.

Add cooked jasmine rice to the pan with lard and fry until heated through.

Stir in carne de Nora for flavor.

In a separate pan, heat olive oil until rippling and fry eggs until crispy.

Serve the fried rice topped with the Spanish fried egg and garnish with parsley.
