  • .5 lb Asparagustrimmed
  • 2 Eggsfried
  • 2 tbsp Olive oil
  • .5 tsp Salt

    Trim the woody ends of the asparagus by bending them until they break naturally.

    Heat olive oil in a sauté pan over medium heat.

    Add asparagus to the pan, sprinkle with salt, and sauté until tender.

    In another pan, heat oil for frying eggs.

    Crack eggs into a ramekin and carefully add to the hot oil.

    Fry eggs until whites are cooked and yolks are runny, or to your preference.

    Remove eggs with a spatula and serve over the sautéed asparagus.
