Spaghetti alla Nerano (Fried Zucchini Pasta)

- •600 g Zucchini
- •5 oz Provolone cheeseDel Monaco Caciocavallo or smoked
- •Oil for frying300°F / 150°C
- •SaltA pinch
- •11 oz Spaghetti
- •4 tbsp Olive oil
- •1 clove Garlic
- •1 oz Parmigiano cheese
- •Hot pasta water3/4 cooked, finish cooking in the pan

Slice the zucchini and fry in oil at 300°F / 150°C until golden brown.

Cook the spaghetti until 3/4 done, then reserve some pasta water.

In a pan, heat olive oil and sauté garlic until fragrant.

Add the fried zucchini to the pan and mix with the spaghetti.

Add the reserved hot pasta water and finish cooking the spaghetti in the pan.

Stir in provolone cheese and parmigiano cheese until melted and creamy.

Season with a pinch of salt and serve immediately.
