Spaghetti all'Assassina

- •5 oz Triple concentrated tomato paste

Prepare tomato broth by mixing 5 oz of triple concentrated tomato paste with 5 cups of water. Add two pinches of salt and bring to a simmer. Set aside.

In a large pan, sauté 3 cloves of garlic (2 whole mashed, 1 minced) in 1/2 cup of olive oil over medium heat until golden brown.

Add 1/2 cup of undiluted tomato puree to the pan and let it reduce for a minute.

Add uncooked spaghetti to the pan, frying it until it starts to stick and becomes crispy. Flip to brown both sides.

Gradually add the hot tomato broth to the pan, treating it like a risotto. Allow the broth to be absorbed before adding more, repeating until the spaghetti is cooked.
