Ingredients
  • 100 grams Spaghettiabout one serving
  • Saltfor pasta water
  • Fried shallotsstore-bought or homemade
  • 2 tablespoons Olive oil
  • 4 Garlic clovesminced
  • Chili flakes(optional)to taste
  • Parsley(optional)fresh, minced

    Cook spaghetti in salted water until almost al dente.

    Toast store-bought fried shallots in a skillet until golden brown.

    Heat olive oil in a pan and add minced garlic and chili flakes. Cook until garlic is pale golden brown.

    Add a little pasta water to the garlic and oil to stop cooking.

    Add spaghetti to the pan with garlic oil and half of the fried shallots. Cook on high heat, adding pasta water to create a creamy emulsion.

    Finish with parsley and remaining fried shallots before serving.
