Spaghetti Aglio Olio e Fried Shallot
A classic Italian garlic spaghetti with the addition of fried shallots.

- •2 tablespoons Olive oil
- •4 Garlic clovesminced
- •Chili flakes(optional)to taste

Cook spaghetti in salted water until almost al dente.

Toast store-bought fried shallots in a skillet until golden brown.

Heat olive oil in a pan and add minced garlic and chili flakes. Cook until garlic is pale golden brown.

Add a little pasta water to the garlic and oil to stop cooking.

Add spaghetti to the pan with garlic oil and half of the fried shallots. Cook on high heat, adding pasta water to create a creamy emulsion.
