Ingredients
  • 1 cup Quinoa
  • 2 cups Waterfor boiling quinoa
  • 1 cup Black beanscooked
  • 2 tablespoons Olive oil
  • 1 pinch Cumin
  • 1 pinch Salt
  • 2 Chillieschopped
  • 1 teaspoon Sugar
  • 1 tablespoon Vinegar
  • 1 tablespoon Lemon juice
  • 2 Eggsfried
  • 1 Avocadohalved
  • 2 Tomatoessliced
  • 1 handful Mintchopped
  • 1 handful Corianderchopped
  • 2 Spring onionssliced
  • 1 teaspoon Chilli sauce(optional)

    Boil quinoa in water for 15-20 minutes until cooked and fluffy.

    Fry black beans in olive oil with a pinch of cumin and salt until crispy.

    Chop chillies and mix with salt, sugar, and vinegar. Set aside.

    Drain quinoa and spread on a tray to cool. Drizzle with olive oil and lemon juice, and season with salt.

    Fry eggs until crispy on the bottom and soft on top.

    Assemble the dish with quinoa, crispy black beans, fried eggs, avocado, tomatoes, mint, coriander, chillies, spring onions, and a drizzle of chilli sauce.
