Mix 100 grams of bottled water with 100 grams of sourdough starter.

Add 100 grams of bread flour and mix well.

Cover and let it sit until bubbly and active (4-6 hours).

Add milk, sugar, beaten egg, and oil to the mixture. Mix well.

In a larger bowl, mix flour and salt. Make a well and pour in the liquid mixture.

Mix into a sticky dough and cover. Let it sit for 1 hour.

Turn the dough onto a wet bench, fold, and return to the bowl. Cover and let sit overnight (9-12 hours).

Grease a baking tin and oil a piece of cling film.

Turn dough onto a floured surface, knock back, and form into a ball.

Divide dough into 12 pieces, roll into balls, and place in the tin.

Cover with oiled cling film and let rise in a warm oven for 2 hours.

Preheat oven to 180°C (355°F). Remove cling film and bake for 16 minutes.
