Saute whole cloves of garlic in olive oil, then add sausage, ribs, stew pork, beef, and pancetta.

Add salt and red wine. Prepare a bouquet of carrot, celery, and fresh herbs wrapped in twine. Add to the pot.

Cover and cook the meat on low heat for about 50 minutes, adding water as needed.

Add tomato paste, tomato puree, and whole onion. Add salt to taste. Cover and cook for 40 minutes.

Add sauteed mushrooms to the sauce.

For polenta, add water and olive oil to a pot and bring to a simmering boil. Remove from heat and slowly add polenta while whisking.

Return pot to stove and cook polenta over low heat for 50 minutes, stirring occasionally.

After 40 minutes, add three tablespoons of sauce and pecorino cheese to the polenta. Mix well and cook for 10 more minutes.
