Smoky Stir Fried Greens

Slice and smash the ginger. Prepare garlic cloves.

Cut bok choy into segments, separating thicker parts from leaves.

Blanch thicker parts of bok choy in simmering salted water for 15-30 seconds.

Add leaves and cook until bright green and tender-crisp.
