  • 1 Pork shoulder
  • 2 OnionsHalved
  • 4 Garlic clovesCrushed
  • 3 tbsp Smoked paprika
  • 2 tbsp Brown sugar
  • SaltTo taste
  • Black pepperTo taste
  • Olive oilFor drizzling
  • Thyme stalksFor flavor
  • MayonnaiseShop-bought
  • HoneyFor sweetness
  • Chipotle pasteSmoked
  • MustardFor mayonnaise

    Preheat the oven to 140°C (284°F).

    Halve the onions and place them in the roasting tray with the roots on.

    Crush the garlic cloves and mix with smoked paprika, brown sugar, salt, and pepper to form a paste.

    Rub the paste over the pork shoulder and place it on top of the onions.

    Drizzle olive oil over the pork and add thyme stalks underneath.

    Roast in the oven for 5.5 to 6 hours.
