Ingredients
  • Beef brisketcut into large chunks
  • Black pepperto taste
  • Saltto taste
  • Vegetable oilfor browning
  • 4 Carrotstrimmed and cleaned
  • 2 Onionschopped
  • 2 Celery stalkschopped
  • 4 Parsnipspeeled and chopped
  • 4 Garlic clovessliced
  • 2 dessert spoons Flourfor thickening
  • 4 Bay leaveslightly squished
  • 350 ml Porter beerfor flavor
  • 500 ml Beef stockcan be topped up if needed
  • Worcestershire sauce(optional)for added flavor

    Preheat oven to gas mark 3.

    Cut beef brisket into large chunks and season with salt and pepper.

    Brown beef in batches in a hot pan with oil.

    Prepare vegetables: chop carrots, onions, celery, and parsnips.

    Slice garlic cloves and add to beef.

    Lightly caramelize vegetables in the same pan used for beef.

    Add flour to vegetables and cook for 1 minute.

    Transfer everything to a casserole dish, cover with parchment paper and lid.
